Vegan Caesar Salad Dressing
Like caesar salad but not its calories (approx. 80 calories in one tablespoon)
Maybe you might enjoy this simple dairy-free, vegan, versatile caesar-like salad dressing ~35 calories per tablespoon. All natural and good fats.

INGREDIENTS (makes ~170mL):
- 1 cup raw unsalted cashews
- 1/2 cup filtered water
- 1/4 cup lemon juice
- 1 tablespoon fresh peeled garlic (roughly chopped)
- optional: salt to taste
METHOD:
1 . Add all ingredients into a blender and blend until smooth. You can add a bit more water to your desired consistency (if necessary). I don’t typically add salt to this, but to those who prefer, you can add salt to taste.
2. Store in the fridge, covered or up to 3 – 5 days.
