Daikon Radish Ham Salad Recipe
A light & refreshing side dish! My mother-in-law made this salad side dish once, and it was so good, I had to jot down her recipe and make it again. Its not a salad to be eaten alone.
Super simple to make!
Pairs well with Japanese dishes that include sushi, sashimi, tempura, miso soup, tofu, edamame etc.
INGREDIENTS:
(makes ~2 to 3 servings)
- 500g daikon radish
- 60g deli ham of your choice*
- 2.5 tbsp low fat mayonnaise, I use this
- 1.5 tsp lemon juice, I use this organic one
- 1 tsp sugar
- 1 tsp fine salt
- optional: 1/8 tsp dried parsley flakes
*Consider low salt or natural options as deli meats can be very salty.
Can substitute with thinly sliced turkey or chicken deli meats.
For better taste, I recommend getting it freshly sliced at the deli section of your local supermarket!
METHOD:
- Wash, peel and cut daikon radish into strips. Roughly 1 inch long x 1/4 inch x 1/4 inch.
- Place daikon strips in a large bowl.
- Sprinkle fine salt all over. Mix well and ensure salt is evenly distributed. This is to drain the water out of the daikon.
- Let daikon radish sit for 30 mins.
- After 15 mins, place two layers of paper towels or cheese cloth on a large sieve.
- Place the daikon strips on the paper towel. Squeeze the daikon strips until it’s juices are out.
- Transfer the daikon strips into salad bowl.
- In a small dish, mix mayonnaise, sugar and lemon juice.
- Add the mayo mixture onto the daikon strips. Mix well.
- Slice deli ham into approximately 1 x half inch slices.
- Add ham slices into the daikon. Mix well.
- Ready to serve!
Today, I paired this side dish with the frozen tempura I made a few months back. So good!
